INGREDIENTS

6 medium eggplants

Olive oil

3 medium onions

1 clove of garlic

3 large tomatoes

4 green peppers

1 teaspoon of granulated sugar

1 teaspoon of salt

Parsley

RECIPE

Cut off the stems of the eggplants, wash and dry them. Heat the olive oil in the pan. Align the eggplants. Close the lid. Lightly fry the eggplants all over on low heat. Take the fried eggplants on a paper towel-lined plate. Peel off their shells. Then place on the baking tray. Outline the middle with a knife. Saute the onions and garlic with the olive oil you put in the pan for the stuffing. Add the peeled and diced tomatoes and chopped peppers. Continue sautéing until the tomato juice has been released and absorb the juice. Add powdered sugar and salt. Place the stuffing you prepared in the middle of the eggplants. Bake in a preheated 180-degree oven for 15-20 minutes. Optionally, you can garnish with parsley and serve.
